I’m a coffee person, big time, and I’m surprised that it took so long to make a coffee cake for the blog. But I didn’t really want to make any plain ol’ coffee cake (and we had some ripe bananas leftover), so I decided to try something new and the banana bread coffee cake was the delightful result. Very simple and easy to bake, this is sure to awe your guests the next time you serve them a slice of this delectable cake with some coffee.
The crumb topping is an important part of the recipe, and getting it right is essential if you want that amazing crumbly crust. Use your hands to melt the cubed butter into the dry ingredients until the concoction looks like coarse crumbs. Sprinkle a generous amount of this concoction on top of the batter and you’re all set.
This cross between the classic Banana Bread and coffee cake is sure to be a holiday favourite! Here’s the recipe.

INGREDIENTS
For the Banana Bread
- 3-4 ripe bananas
- ⅓ cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1½ cups all-purpose flour
For the crumb topping
- 1 teaspoon ground cinnamon
- 1 cup flour
- 1 cup brown sugar
- 6 tablespoons butter, cold
STEPS
- Preheat the oven to 180°C or 350° F. Line the pan with parchment. In a bowl, mash the ripe bananas and add the butter, baking soda, salt, cinnamon, sugar, egg and the vanilla extract. Mix well.
- Add the all purpose flour and mix until incorporated.
- For the crumb topping, add the cinnamon, flour, sugar and butter and incorporate the butter until the concoction looks like coarse crumbs.
- Pour the batter into the prepared pan and sprinkle the crumb topping on top. Pop it in the oven for about 50 minutes. Let cool.

The crumb looks so inviting, and the way it largely integrated itself into the crust…spectacular! A double dose of cinnamon too, both in the crumb and in the bread, vaults this one to the top, even on this site. Of course, I’d “cheat” and enjoy it without coffee!
