Carrot Cake Cookies

You know what’s better than Carrot Cake? Carrot Cake Cookies, that’s what! Soft and fluffy, these cookies are a treat to eat, not to mention that exquisite aroma floating around the kitchen as these decadent cookies bake to perfection. And its quite nutritious, with juicy carrots hidden in the cookies like little treasures. So here’s the recipe for these irresistible Carrot Cake Cookies.

INGREDIENTS

  • 1 cup butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 cups shredded carrots
  • 2 cups oats

STEPS

  • Preheat the oven to 175°C or 350°F and prepare the baking sheet. In a bowl, mix the butter and sugars. Add the eggs one at a time, and add vanilla.

  • In another bowl, sift together the dry ingredients. Pour the dry ingredients into the wet ingredients and mix well

  • Add the shredded carrots and oats and mix until incorporated.

  • Scoop the dough onto the baking sheet and bake for about 15 minutes, until golden brown. Allow to cool down to room temperature.

  6. Not surprisingly, another wonderful creation! Using oats is a great choice, and it must work so well with the nutmeg and the cinnamon. An interesting variation, perhaps, is to add some chopped walnuts. What do you think?

    1. Walnuts would be lovely! I did think of adding them, but didn’t in the end. I will add the walnuts next time, though. And loved your pecan cupcakes, by the way. They looked fantastic.
