Vegan Chocolate Chip Banana Muffins

Cinnamon, nutmeg, chocolate and bananas in one muffin? If that’s not heaven, I don’t know what is. The cinnamon season is going strong and so are my recipes inspired by the delightful spice. The muffins are soft and moist inside, with a soft crunch on the top. The aroma when the muffins are in the oven is heavenly. And on top of all this goodness, the muffins are a hundred percent vegan. The taste is indiscernible from regular muffins. So here is the recipe for these decadent Vegan Chocolate Chip Banana Muffins.

INGREDIENTS

  • 3 cups all-purpose flour
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 ripe mashed bananas
  • 1cup canola oil
  • 1 cup soya milk (or coconut milk or almond milk)
  • Chocolate chips (vegan)

STEPS

  • Preheat the oven to 350°F or 170°C and line the muffin pan. In a bowl, add the flour, white sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt. Mix well.

  • In another bowl, mix the mashed bananas, canola oil and the soya milk. Mix well and pour the mixture into the flour mix. Stir until incorporated.

  • Pour the batter into the prepared pan and sprinkle the chocolate chips onto the batter. Bake for about 30 minutes.

  3. Yet another temptation, and a great way to celebrate surviving midterms! It’s nice you’re not shy about using nutmeg. You chose a perfect amount that makes the spice identifiable, yet allows it to retain its subtle mysteriousness. Spot-on for autumn!

      I love muffins, even if I don’t necessarily like the main ingredient. Banana is not a favourite but I love it in my muffins. Especially with cinnamon and nutmeg. I’m experimenting with the amount of nutmeg to be used, but I’m glad you like the quantity used here.
